Make high protein pancakes into a healthy and tasty alternative..
We made these fluffy and light pancakes with half a cup of regular flour and half a cup of garbanzo bean flour. The result is a light pancake that leaves you feeling full and gives you energy and nutrition to start the day.
Garbanzo Bean Flour Pancake Recipe (for five people)
Step 1 - Sift the flour (if you don't have a sifter, lightly whisk with a whisk)
- 1/2 cup of regular flour
- 1/2 cup of garbanzo bean flour
Step 2 - Whisk flour with other dry ingredients
- 2 tablespoons maple sugar (we used Purinton Maple, shopped on Treatmo iOS App, farm direct)
- 2 teaspooons of baking powder
- 1 teaspoon baking soda
Step 3 - Add remaining ingredients (no salt added!)
- 2 eggs
- 1 cup of buttermilk
Combine all of the dry ingredients, whisk together. Add lightly whisked eggs and buttermilk. Mix all until combined leaving a few clumps - no need to over mix
Prep your pan on medium heat with sunflower oil or other nut or vegetable oil. Using a 1/4 cup, scoop out batter and pour into pan. Sprinkle on blueberries or chocolate chips if you wish! Cook until both sides are brown --about a minute or two on each side, or until golden brown.
