Vegetarian Fried Chicken And Waffles
When you're craving a delicious and fun meal that is a bit healthier, try vegetarian fried chicken waffles.
Fried chicken and waffles is a dream combo. The taste of the fatty, fried chicken with the sweet waffles and syrup makes this a decadent meal.
If you love the flavors but are looking for a healthier version, skip the fried chicken and bread tempeh (fermented soybean cake) instead.
For this recipe, I used almond meal flour to bread the tempeh--it was amazing: The crust that formed was insanely good and even more flavorful than fried chicken breading.
Vegan Fried Chicken And Waffles
Start with your tempeh breading
- 1/4 cup aquafaba (from a can of chickpeas)
- 1/2 cup almond meal flour
- 1/4 tsp salt
- 1/2 tempeh cake in 1/8 inch slices
- 2 tbsp vegetable oil
Combine almond meal, aquafaba and salt. Add the slices of tempeh and carefully coat in the mixture so as not to break the tempeh apart, and cover well on both sides of each slice.
In a pan on medium high heat with oil, cook your breaded tempeh on each side until golden brown.

Best Easy Waffle Recipe
- 2 cups all-purpose flour
- 1/4 cup sugar (I used maple sugar)
- 1 tbsp baking powder
- 1/4 tsp salt
- 1 1/2 cups milk (use nondairy if you prefer)
- 1 tbsp vanilla extract
- 2 large eggs, separated, plus 2 additional egg whites
- 4 tbsp unsalted butter, melted butter
- Add zest of orange or lemon (optional)
Combine your dry ingredients in a bowl and whisk together.
Separately, combine your milk, vanilla and 2 egg yokes. Mix just until combined.
Beat your egg whites (plus two additional egg whites) until soft peaks form.
Bring your dry ingredients and wet ingredients together (excluding your egg whites at this point), being careful only to stir as much as needed. Slowly add the melted butter.
Once combined all your ingredients are combined, fold in your egg whites (without overdoing it).
Oil your waffle iron, then scoop in a 1/3 cup into each mold.
Kale with Pumpkin and Hemp Seeds
- 1/2 a bunk kale
- 1 tbsp hemp seeds
- 2 tbsp pumpkin seeds
- 1 tbsp sunflower oil
Preheat oven to 400˚ F
Wash and break kale into medium-sized pieces. Combine all ingredients in a bowl and coat the kale well with the mixture. Spread out the kale on a baking sheet and place in the oven for 15 minutes.
Place your tempeh atop your waffles and pour on the kale, followed by your maple syrup. Enjoy!
