The Three Taco Test and Silly Chilly Hot Sauce from Hoboken

There's only one way to test a sauce and it's the three taco test: Vegetarian, beef and fish. 

We put Silly Chilly Hot Sauce, made in New Jersey, through the taco gauntlet and came out smiling.

First, we cooked up Alaskan cod with lime and lime basil from a company called Daddy's Gourmet -- a to die for spice maker out of Mesa, Arizona. Then we made simple grape seed oil, fresh orange, lime and oregano-based mole sauce to dress locally raised beef. Lastly, we spiced up a basic can of organic black beans with heirloom green peppers and sel gris from Napa Valley EVOO and Daddy's Gourmet 'Mexican' seasoning, organically grown and herb-tastic.

We poured Silly Chilly's Mild Fresh Mango and Sweet Peppers Hot Sauce on our cod, avocado taco and, boom!--the mango tasted super fresh, while the sweet and mild spice profile from the peppers acted as a perfect complement to the lime finished cod. A fresh and exhilarating taco that took me back to St. Lucia.

Next, we poured the Habanero Hot Sauce -- with a warning to our guests, because this is the new hot. Toss your Tabasco sauce, jump on this instead. The fresh peppers and fruit notes from local New Jersey farms sizzle in this hot, well rounded habanero sauce on the ground beef taco with mole sauce. This one made me feel like I was sitting in Otro in Phoenix, Arizona.

Lastly, we opted for the Mango sauce again on the vegetarian taco, and Pow! This was a zinger. With Mexican spiced beans and fresh cut peppers, the Silly Chilly Mango sauce added the perfect accent to this veggie bite that would wow any meat lover. This reminded me of a locally famous taco cart on West 14th Street, NYC.
