A Perfect Pork Chop And Fresh Spring Peas in 20 Minutes

It's amazing how much flavor you can achieve in a 20 minute meal. 

Meat in our household when I was growing up was more of a treat that we enjoyed once in a while. When I make a meal with meat today, I try to shop from a local butcher or farmer. But the time constraints my parents had back then are still the same today.

This pork chop happens to come from Three Sisters Farm on Whidbey Island--a small local farm that never processes their meat or cages their animals. It's as fresh and high quality as you can get, which makes a big difference in the flavor.

This recipe also allows you to appreciate the flavor of fresh pork on its own with only the simple addition of all natural and organic OKB BBQ Sauce that adds a burst of rich fruity and smoky flavor and heat. The pork chop with OKB goes really well with mashed mint peas!

For the Pork

  • 1 boneless pork chop 1 inch thick
  • 4 tablespoons the OKB BBQ Sauce

Set oven to 395 degrees, rack second from the top.

One way to flavor the pork is to marinate it in a bag with the sauce over night. If you forget or don't have time, the alternative is simple. Place pork shop in a small baker and roast for 15 minutes. Then add your sauce and roast for another five minutes. 

Get the peas going while the pork is cooking.

For the Peas

  • 1 mashed garlic
  • One handful of fresh mint
  • 1 green chile pepper
  • A pinch of salt (we used Terre Botanicals)
  • 1 tablespoon of oil (we used sunflower oil)
  • 2 cups of peas (fresh or frozen)

Place the peas in a pot and cover them with water. Cook just until the color starts to brighten and the peas are still a bit crunchy--not mushy.

Remove the peas and drain. Meanwhile, heat the oil and throw in the garlic, mint and chile. Combine these ingredients with the peas. Heat for about 8 minutes. Turn off the heat and mash.
