What's Better Than A Packet Of Thanksgiving Dinner in A Dumpling

Not much is better than some of your favorite foods wrapped in a tiny package to eat all at once like these Thanksgiving dumplings!

If you love the flavors of Thanksgiving from sage to mushrooms and Turkey too, this is a recipe you'll enjoy. If you're vegan we created an alternative which is the bomb dot com. Everyone enjoyed this meal so much. And taste and texture wise, there was little variation between the vegan and meat option. Make this confidently for a crowd with varying diet preferences. Of course, separate your preparation to keep the utensils clean and turkey free for the vegan option, if you do. 

Below we share how to make a fail proof stuffing (it happens to be vegan). It is a beautiful complement to your turkey. But if you want to enjoy the essence of Thanksgiving, make this stuffing and cranberry sauce any time. 

Dumpling Wrapper Recipe

  • 2 1/2 cups of organic flour
  • 2/3 cup boiling water
  • 1/3 cup ice cold water
  • 1 tsp wheat starch (optional -- acts as a binder and gives a sheen to your dumplings -- best homemade)
  • A pinch of salt
  • Cornstarch for dusting the wrappers before placing in a pile (otherwise they will stick together)

First add your hot water to your flour and mix with a wooden spoon until the mixture is crumbly. Then add your cold water and mix a bit more, before using your hands to form a dough ball. Turn the dough out onto a floured surface and knead for about five minutes or until smooth. Place ball into a bowl and cover with a damp towel, plastic wrap on top if using just a damp paper towel.

Turkey Drumsticks

We made this recipe using turkey drumsticks as one option and then seitan as the second vegan option. See how to make seitan here. For this recipe, we steamed the seitan with the same seasoning we used for the drumsticks (below).

For the drumsticks, toss with Kamen olive oil and Daddy's Gourmet marjoram lemon, sage and parsley, celery seeds and thyme. Roast uncovered on a tray at 350˚ for an hour and 30 minutes. Baste with a lemon, oil and water dressing every 20 minutes.

Stuffing or Dressing (for 22 dumplings. Double recipe if using for a small to medium Turkey)

  • Two cleaned large carrots
  • Two cleaned stalks of celery
  • 1/4 cup of curly parsley
  • 1/2 cup organic hazelnuts (we purchased from Holmquist in Washington State)
  • 6-8 cleaned and dried crimini mushrooms (wash about an hour in advance and roll up in a towel until ready to use to drain out any moisture)
  • 2 slices of dry bread or 1/2 a cup of croutons (we used wheat vegan bread)
  • 1 tsp Daddy's Gourmet Marjoram Lemon (includes red Hawaiian sea salt)
  • 1 tsp sage
  • 1/2 tsp cloves
  • 1/2 tsp nutmeg
  • 1 tsp Kamen Organic Olive Oil -- it is cold pressed and tastes just like olives, it adds a really nice dimension to this
  • 1-2 drops Terre Botanicals fennel

Puree the carrots, mushrooms, celery and parsley in a blender. We used a Cuisinart. Combine all of the spices and the oil with a spoon. 

Homemade Cranberry Sauce (raw and cooked options)

  • 1 cup fresh cranberries
  • 1/2 cup juice from an orange
  • 2 tablespoons Purinton Maple Sugar
  • Dash of salt

Blend all ingredients until pureed--this goes into your dumpling!

If you want cranberry sauce for serving with turkey, only lightly blend the mixture, and then pour into a sautée pan (or use whole cranberries), add a cup of water and cook for 15 minutes. Double the recipe to serve 5 people.

Boiled Potatoes

1 russet potato diced and boiled until soft -- about 20 minutes on medium high heat.

Cooking the Thanksgiving Dumplings

Setup your work space so that each of the parts of the recipe are in a bowl ready to be spooned out. 

Add a scoop each of your potatoes, stuffing, and turkey into the center of your dumpling wrapper. Add about a 1/2 teaspoon of your cranberry mix on top. 

With the wrapper in the center of your hand, pull up the sides and pinch while pushing the dough towards the center. 

Oil and heat a saute pan with lid to medium, medium high heat. Place your dumplings in the pan as shown in the video. Cook for 4-6 minutes. Check the bottoms of the dumplings. They should be a nice light golden brown. Then take a 1/4 of water, and protecting yourself from splash with the lid, pour in the water and put on the lid. Steam the dumplings for another 3-4 minutes!
