Paleo Pumpkin Muffins
Whether you are paleo, grain free, gluten free, or dairy free these muffins are so worth making!
They contain healthy fats, fiber, and protein and are so tasty. They are made with real, wholesome ingredients, making them the perfect snack anytime of day! I love to have one with breakfast with a nice warm cup of coffee.
WHAT YOU WILL NEED:
- 3 eggs, lightly beaten
- 3/4 cup pumpkin puree
- 1/4 cup maple syrup
- 1/4 cup creamy almond butter
- 2 tablespoons pumpkin seed butter (I use Fervor Nut Butter's brand and it is amazing! Find it on the TreatMo iOS App)
- 2 tablespoons coconut oil, melted/cooled
- 1 teaspoon vanilla extract
- 2 cups almond flour
- 1 teaspoon baking soda
- 1 teaspoon pumpkin pie spice or cinnamon
Preheat oven to 350F. Line 10 muffin cups with parchment liners.
In a mixing bowl, whisk together almond flour, baking soda and spices.
Add the eggs, pumpkin puree, almond butter, pumpkin seed butter, coconut oil, vanilla, and maple syrup. Mix until combined.
Transfer batter into muffin cups and sprinkle toppings of your choice (chocolate chips, walnuts, pecans, go crazy!).
Bake for around minutes or until a toothpick comes out clean from center of muffin.
Let cool for at least one hour.
Tip: Store in the fridge for up to a week!
