Fresh is the word at this herb farm in Mesa run by Dewayne and his business partner's Kevin and Andrea Malchow. With most-off-the shelf spices at your local grocer, getting the flavor in your food requires a few extra shakes. Not so with Daddy's Gourmet.
Entrepreneur and third generation farmer, Dewayne knows plants and is a self proclaimed "Extreme Flavorist." For the creative spice blends and salt infusions he makes, he also knows that less is more. The potency of his organic herbs is so strong that just a little dash will do.
It doesn't take long into a conversation with Dewayne to realize his knowledge of spices is at a Doctorate level. From origins to regions to growing, he's an expert who is passionate about farming and crafting the best quality, most flavorful blends.
He's beyond convention when it comes to planting for what people want to growing less common varieties and multiple variations on a theme. At their farm in Mesa, they grow eight varieties of basil, including lemon, lime, cinnamon, purple ruffle, amethyst, red rubin, Thai and Christmas, where you might have been exposed to only two basic kinds previously. Scratch that.
Beyond herbs, Dewayne grows heirloom vegetables including a variety of tomatoes such as the Mexican midget, plus an array of hot peppers, not to mention the world's hottest chili, the ghost chile. He's also the guy you want to call for a custom order.
The fertilizer they use is a potent, organic and environmentally-friendly solution from the company OceanSolutions -- it contains all 90 elements of the periodic table. The founders were determined to give plants all of the essential ingredients needed to grow strong, allowing the plant to draw what it needs.
The rich soil is certainly a primary component of the power of the herbs grown here, but the experience, dedication and commitment to quality takes everything to the next level.
When you eat bland food at a restaurant that's drowning in sauce, it shows a lack of imagination or understanding of the power of seasoning. You can tell by the first taste. You can't always pinpoint why the food tastes flat aside from perhaps poor preparation or stale ingredients, but it leaves an impression, and not usually a good one. It doesn't have to be that way.
